Gluten Free Fish Sticks
Sometimes the only way to get your children (or adults!)  to eat fish is through fish sticks. You’ll enjoy the crispy coating on these fish sticks. Serve with tartar sauce, french fries and a green veggie.

Preheat oven to 400 degrees. Beat eggs and add lemon juice in small bowl. Add baking mix to another small bowl or plate. Combine seasonings and bread crumbs in another bowl. Dip fish into baking mixture, egg mixture, then bread crumb mixture. Coat baking sheet with olive oil. Lay fish in single layer and bake for 10-13 minutes. Turn one time while baking.

Gluten Free Butter Pecan Larabars

Have you ever had a Larabar? They are tasty and good for you. I’ve used the Larabar concept of fruit and nuts to create a butter pecan bar recipe that’s perfect for traveling.

  • 1/2 cup pecans
  • 1/2 cup pitted dates
  • 1/8 teaspoon cinnamon
  • 1/8 teaspoon vanilla
  • 1/4 teaspoon butter flavoring

Grind pecans finely in food processor. Add dates and grind until well incorporated. Add cinnamon, vanilla and butter and mix for a few seconds. The mixture should be sticky. If it’s not quite sticking together, add another drop of vanilla extract. Spread mixture into a small glass pan. Allow to harden, about an hour, and cut into bars. These may be frozen as well. To freeze, wrap individual bars into saran wrap and place in freezer bag in the freezer for up to 3 months.

Servings: depends on size of bar but about 5 bars

Green Bean Cauliflower Bake

This side dish tastes great though is easy to put together. Try it with a different type of cheese for a twist.

  • 1 cup frozen green beans
  • 1 head cauliflower, chopped into bite sized pieces
  • 3 tablespoons diced onion
  • 3/4 cup butter
  • 3/4 cup mayonnaise
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup sharp cheddar cheese
  • 3 slices cooked and crumbled bacon, optional

Preheat oven to 35o. Steam cauliflower. When thoroughly cooked, add green beans and onion and heat through for a 5 minutes. Stir in butter, mayonnaise, garlic powder, salt and pepper. Place mixture in 2 quart casserole dish. Top with cheese and bacon. Bake for 18-20 minutes.

Gluten Free Gingerbread Cookie Recipe

Enjoy these pretty cookies with a glass of dairy milk or almond milk. Have the children decorate them though they won’t last long! Don’t tell anyone and they won’t know they are gluten free.

  • 3 cups blanched almonds
  • 1/2 cup molasses
  • 3 tablespoons butter
  • 1/3 cup maple syrup
  • 1 tablespoon milk
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • 1/2 teaspoon cloves
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • Optional Garnishes: chocolate chips, raisins, dried cherries or cranberries, licorice rope for mouth

Preheat oven to 350 degrees. Grind almonds in food processor or coffee grinder. If using coffee grinder, grind 1/2 cup at a time.  Pour almond flour into a large mixing bowl and stir in cinnamon, cloves, ginger, and nutmeg. Heat molasses to boiling in saucepan. Stir in milk, butter and maple syrup until combined and remove from heat. Pour molassess syrup into dry ingredients and mix thoroughly. Mix in baking soda and salt just until combined. Roll out dough with rolling pin covered in oil on parchment paper. Cut into gingerbread men shapes. Line a cookie sheet with a silicone baking mat or parchment paper. Bake for 9-10 minutes and remove from pan. Allow to cool before decorating. Attach eyes, nose, buttons and mouth with honey.

Gluten Free Turkey Minestrone Soup

If you have leftover turkey, this makes a filling meal. Try it with chicken for a twist.

  • 1/2 cup chopped carrot
  • 1 medium onion, chopped
  • 1 tablespoon olive oil
  • 2 cups cooked turkey
  • 1/2 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon basil
  • 1 garlic clove
  • 1 can stewed or diced tomatoes
  • 1/2 small zucchini, sliced
  • 1/2 cup frozen peas
  • 3 cups chicken stock or turkey stock
  • 1/2 cup brown rice macaroni

In a saucepan, saute onion and carrot in oil for 10 minutes. Stir in turkey, seasonings, tomatoes, zucchini, peas and stock. Heat to boiling. Reduce heat, add macaroni and simmer for 10 minutes.

Gluten Free Chicken Paprika Recipe

Serve this delicious chicken and sauce over brown rice with a green vegetable on the side. The brown rice flour helps make the chicken a little crispy. Palm shortening is not hyrdogenated and a healthy alternative to regular shortening though either can be used in this recipe.

  • 3 lbs cut up chicken
  • 3 teaspoons salt, divided
  • 1/2 cup brown rice flour
  • dash of pepper
  • 1 1/2 teaspoons paprika
  • 1/4 cup palm shortening or regular shortening
  • 1 large onion chopped fine
  • 10 oz can tomato puree
  • 1 tablespoon of paprika
  • 1/2 cup sour cream or greek yogurt

Directions:

Rinse chicken and pat dry with paper towels. Melt shortening over medium-high heat in large skillet. Meanwhile, Mix together flour, 1 1/2 teaspoons of salt, 1 1/2 teaspoons paprika, pepper in large ziplock bag and coat chicken, one piece at a time, in bag. Cook chicken over medium heat 15 minutes or until light brown on outside. Remove chicken and set aside.

Cook onion in remaining shortening until soft. Stir in 1 tablespoon paprika, tomato puree and remaining salt. Place chicken onto sauce mixture and cover. Simmer on low 30-40 minutes until chicken is heated through. Remove chicken and stir in sour cream or yogurt. Serve sauce over chicken.

Gluten Free Biscuits Recipe

Don’t let a gluten restriction prevent you from having good tasting biscuits. These gluten free biscuits bake up soft and delicious.

Ingredients:

Preheat your oven to 350 degrees F. Sift dry ingredients until well blended. Cut butter into dry mixture until it resembles course crumbs. In separate bowl whisk the eggs, sugar, and almond milk together into a suitable mixture. Slowly add the egg mixture to the dry mixture. Mix together until a suitable consistency, being careful not to over-handle the dough. Form into biscuit-sized lumps and place on parchment paper on a cookie sheet. Bake for 25 minutes or until golden brown.
Delicious served with jam, honey, or with a gluten free gravy.

Gluten Free Soy Sauce Recipe

Commercial soy sauce is full of wheat gluten, however you can make your own gluten free soy sauce quickly and easily. This gluten free soy sauce is delicious for recipes that call for soy sauce or as a topping for your favorite foods.

  • 1 can beef broth
  • 1 tsp brown sugar
  • 1/8 tsp onion powder
  • 1/8 tsp garlic powder
  • 2 tsp apple cider vinegar
  • salt and pepper to taste

Directions:

Stir ingredients into small sauce pan. Heat about 20 minutes or until boiled down to desired consistency. Let cool and poor into glass container. Can be stored in the fridge for 1-2 months.

Bacon Rumake

Rumake is an inexpensive, delicious, gluten free finger food that is sure to be a crowd pleaser at any party. Rumake makes an excellent snack or appetizer.

Ingredients:

  • 1 lb package of chicken livers
  • 1 lb bacon
  • Gluten free soy sauce
  • Barbecue sauce (be sure to check the label to ensure gluten free status)
  • 1 pkg toothpicks

Preparation:

Use a knife to divide chicken livers in half. Place cut livers in pan with some soy sauce and saute on medium high heat for several minutes or until livers are thoroughly cooked. Remove liver pieces and wrap each with a slice of bacon. Use a toothpick to hold it the bacon in place. Lay finished pieces on a cookie sheet and broil in oven for 5 minutes or until the bacon is crisp. Serve with gluten free barbecue sauce for dipping. Serves 4.

Please note most commercial soy sauce contains wheat gluten. You can make your own gluten free soy sauce following this easy recipe.
